CANNABIS CHOCOLATE CHIP COOKIES

No fancy ingredients, just crispy, chewy, soft, melt-in-your-mouth Cannabis Chocolate Chip Cookies made using cannabis-infused coconut oil or cannabutter.


INGREDIENTS

  • 1¼ cup all-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ¾ cup sugar

  • ½ cup cannabutter or cannabis coconut oil

  • 1 farm-fresh egg, beaten

  • ½ teaspoon vanilla extract

  • 1 cup chocolate chips of choice



INSTRUCTIONS

  1. Preheat the oven to 350° F.

  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, and salt. Set aside.

  3. In a medium mixing bowl, using a hand beater, cream together the sugar and oil or butter until it is light and fluffy, approximately 2-3 minutes.

  4. Add the egg and vanilla and beat well.

  5. Gradually add the dry ingredients to the wet ingredients while continuing to mix.

  6. When the dough is formed, gently fold in the chocolate chips.

  7. Create 1 tablespoon dough balls and place them evenly spread on a baking sheet. Gently flatten the dough balls with your hands.

  8. Bake in the oven for 10 minutes.

  9. Remove from the oven and allow to cool 1-2 minutes before removing from the tray and transferring to a cooling rack.

Why is butter popular for cannabis infusion?

butter has a high concentration of fatty acids (saturated fats). The surplus of these fatty acids in butter create a strong binding agent for cannabinoids.

Compared to olive oil, which contains a saturated fat content of less than 20%, butter contains over 70% saturated fats and and 25% monounsaturated fatty acids and thus has the ability to retain far more cannabinoids during infusions, making it far more efficient. butter is a good medium for cannabis-infused oils.
